Lettuce Cup Tacos
Easy low carb, low calorie Tacos in Lettuce Cups make a quick weekday meal. Top with shredded Pepper Jack cheese and salsa or picante sauce.
Ingredients
Meat - Poultry
- 1 lb ground turkey chicken, or beef, use extra lean for reduced calorie
Spices - Seasonings
- 3 to 4 tbsp Skinny5 Taco Seasoning, recipe link follows
Fresh Produce
- 4 bunches baby Romaine or head Bibb lettuce
Dairy
- 1 cup shredded Pepper Jack or Mexican 4 Cheese use reduced fat cheese for reduced calories
Condiments
- 1/2 cup picante sauce, or use salsa fresca or Pico de Gallo
Optional Garnish
- chopped jalapeno, tomato, and avocado {skip avocado on Skinny5 JumpStart}
Instructions
- Remove individual leaves from baby Romain bunches or Boston leaf lettuce. Add to colander, rinse well, and add to salad spinner to remove excess water. Add lettuce "cups" to large bowl. Set aside.
- Warm a bit of avocado or extra virgin olive oil {no more than 1 tablespoon} over medium-high heat in a large frying pan. Sprinkle with homemade taco seasoning {recipe link follows}. Stir mixture until meat is cooked. Remove from heat and transfer to serving dish. If using, add salt and pepper, to taste.
- Add cooked meat to lettuce "cups". Top with shredded cheese and salsa. Optional garnish with diced jalapeno, avocado, and tomato. Note - skip the avocado for Skinny5 JumpStart Phase recipe.
- Goes well with "riced" cauliflower. Recipe link follows. You can also use packaged frozen "riced" cauliflower like Green Giant brand from the freezer section of your local grocers.
