Raspberry Vinaigrette Reduced Calorie

INGREDIENTS
Fresh Fruits
  • 6 oz container raspberries
  • 1 lime fresh squeezed
Condiments
  • 2 tbsp red wine vinegar
Oils
  • 1/4 cup extra virgin olive oil
Sweeteners
  • 30 to 45 drops 100% pure Stevia liquid more or less, to taste
INSTRUCTIONS
  1. Place a wire mesh sieve over a bowl. Wash raspberries and add to sieve. Press raspberries with the back of a spoon so juice drains into bowl while leaving seeds behind.
  2. Squeeze lime and pour juice and vinegar through sieve.
  3. Remove sieve and discard seeds. Whisk oil and Stevia drops into raspberry juice mixture, using more or less Stevia, to taste.
  4. If using, add salt and pepper, to taste.
  5. Optional – add dressing to the blender cup of a blender and mix on high before serving.
